In a food processor, combine tahini and lemon juice; process for 1 minute.
Add olive oil, minced garlic, cumin, and 1/2 tsp salt, process for 30 seconds.
Open, drain and rinse chickpeas; add half to the food processor. Process for 1 minute; scrape sides and bottom of the bowl.
Add remaining chickpeas and salt to taste; process until thick and smooth. Add water if necessary to adjust consistency.
Serve with a generous drizzle of olive oil, a dash of paprika and enjoy!
