1 Sheet puff pastry (thawed)
2 tbsp Picual Extra Virgin Olive Oil
1 Large yellow onion, thinly sliced
8 oz Mushrooms, sliced
1 tsp Fresh thyme
Salt & pepper to taste
2 oz Goat cheese (optional)
Fig Balsamic Vinegar for drizzling
Heat oven to 400°F
Saute oniones in EVOO over medium-low heat until caramelized for 15-20 minutes.
Add mushrooms, thyme, salt, and pepper. Cook until golden.
Lay puff pastry on a lined baking sheet, score a 1/2 inch border, and top with onion-mushroom mix.
Bakes for 20-25 mins until golden.
Drizzle with fig balsamic and sprinkle with cheese.
