Caramelized Onion Dip

Ingredients


3 medium yellow onions

2 tablespoons of Koroneiki EVOO

1 teaspoon sugar 

1 teaspoon salt 

3 springs thyme

4 tablespoons Caramelized Onion Balsamic Vinegar

8oz sour cream

8oz plain greek yogurt

1/4 teaspoon garlic powder

Salt & Pepper to taste

 

Preparation


Step 1

Slice onions into small strips. In a large skillet add Koroneiki Extra Virgin Olive Oil over medium heat. Add onions and stir until they are well covered. Cook for around 20 minutes.

Step 2

Reduce heat to low and add the salt and sugar to your onions. Add the thyme. Caramelize the onions, stirring every 2-3 minutes for about 30 minutes-1hr. 

Step 3

When you only have 10 minutes left, stir in the Caramelized Onion Balsamic vinegar. After 10 minutes, remove the onions from the heat and transfer to a cutting board. Roughly chop the onions into small pieces. 

Step 4

In a bowl combine sour cream , greek yogurt, chopped caramelized onions, garlic powder, salt and pepper, and top with a generous pour of caramelized onion balsamic vinegar. 

Step 5

Enjoy and serve with your favorite potato chips!
