2 Tablespoons Champagne Balsamic VInegar
1 tbsp honey
1 tbsp fresh lemon juice
2 cups mixed berries
1/4 cup mascarpone cheese
1 tbsp sugar
1 tsp vanilla
Whisk together balsamic vinegar, honey, and lemon juice in a medium bowl.
Add mixed berries and toss to coat. Cover and refrigerate for 1 to 3 hours, tossing occasionally.
Whisk together mascarpone, sugar, and vanilla in a small bowl. Refrigerate until ready to serve.
Layer mixed berries and mascarpone in a parfait glass, serve, and enjoy!
