If you’ve got kids in the family (or if you’re just a giant kid at heart), this recipe is definitely one to try. Revamped sloppy joes that are sweet, juicy, and unexpectedly healthy!
We replaced regular ground beef with lean ground turkey, cooked it on our Master Blend Olive Oil, and instead of using a overly-sugary ketchup and brown sugar sauce like the traditional recipes do, we used canned squash puree. Genius! It’s naturally sweet, so you don’t have to add any sugar, and the squash is loaded with antioxidants, vitamins, and fiber. Triply genius! On top of it, we added black beans into the mix just for good measure. These sloppy joes rock.
2 tablespoons Master Blend Olive Oil
1 pound lean ground turkey
1 red onion, finely chopped
1 ½ cups pumpkin or butternut squash puree*
½ cup vegetable broth or water
1 (15-ounce) can black beans, drained
1 tablespoon Dijon mustard
1 teaspoon garlic powder
Sea salt and black pepper, to taste
Whole grain rolls, to serve
Makes about 4 large sandwiches or 8 mini sandwiches.
