Lemon-Kissed Sugar Cookies

There are few things in life as simple and satisfying as the sugar cookie. It has no frills, no thrills, requires no fancy ingredients or cooking techniques. It’s just the perfect melange of flour, butter, and sugar--resulting in a chewy cookie, with ever-so-lightly crisped edges, kissed with sugary crystals on the golden tops. A good sugar cookie is a dream.
We‘ve taken that dream cookie, and we've made it even sweeter. Replacing half the amount of butter in a traditional recipe with our Limonato Olive Oil, we’ve created a lemony sugar cookie that exudes winter. The bright lemon flavor in these buttery cookies tastes like snowflakes in a winter wonderland fantasy. Too good to be true? Not at all. These olive oil-infused cookies are crazy simple to prepare, and they’re great to do with kids, as they love to roll up the cookies and dip them in sugar. Enjoy these holiday cookies with the whole family--and maybe leave a plate out for Santa this year.
½ cup sugar, plus extra for garnish
¼ cup butter
1 teaspoon vanilla
1 cup all-purpose flour
¼ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
- In a large bowl, cream together sugar, butter, and oil. Add egg and vanilla; beat well. In a separate large bowl, sift together flour, baking soda, baking powder, and salt. Add to egg mixture; mix well. Wrap dough in plastic and refrigerate 2 hours.
- Preheat oven to 350°F. Lightly grease a baking sheet.
- Remove dough from refrigerator; form balls of dough from 1 teaspoon. Arrange evenly on baking sheet, leaving 2 inches between each cookie. Gently press each cookie with the bottom of a flat drinking glass; sprinkle the tops with extra sugar. Bake 10 to 12 minutes, until just golden. Remove, cool, and serve.
