Father’s Day Recipe Roundup
Posted by Olivia on Mon, June 11, 2012
We’re gearing up for Father’s Day this month, and that means firing up the grill and getting ready to BBQ all day long. This year, treat Dad to a menu that’s not only delicious, but also good for his heart.
We’ve collected some of our fave recipes from our online recipe collection that are perfect for Father’s Day: these heart-healthy recipes use extra virgin olive oil, fruits, vegetables, and fresh, seasonal ingredients.
Here’s to celebrating all the Dads in our lives!
Grilled Steak with Chimichurri Sauce
Indulging in red meat doesn’t have to be over the top with grease and fat. In this Spanish-inspired recipe, London broil steak is grilled with just salt and pepper and served with an herb and olive oil sauce (not unlike a pesto!). This dish is an elegant, minimalist entrée that’s a refreshing alternative to the usual grilled steak.
Grilled Salmon with Fresh Strawberry Salsa
Who said that hearty men can’t enjoy fish? Here we grill fresh salmon (which is already a heart-healthy choice) and top it off with strawberry salsa and creamy guacamole. If you’re so inclined, shred the fish once cooked and toss all the ingredients into corn tortillas for instant summer tacos.
Chipotle Turkey Burgers with Summer Fruit Salsa
We love these burgers. They are fresh, crunchy, and colorful—and best of all, they’re so much leaner than the usual beef patties. Lean turkey is the name of the game with these burgers, and our Chipotle Grilling Sauce in the mix gives the burgers a smoky, beefy flavor. Top these off with sliced avocados, shredded cabbage, and the condiments of your choice for a summer burger that the whole family will love.
Honey-Mustard Glazed Grilled Pork and Pineapple Kebabs
Is Dad a fan of the Hawaiian pizza? If so, he’s going to love these grilled kebabs. Skewers of pork, pineapple, and bell peppers are glazed with a honey-mustard sauce and cooked until just caramelized. Just serve with rice and a salad and this tropical BBQ meal is complete.
Spicy Lime-Grilled Corn
Grilled corn is usually a must-have for Dad’s BBQ menu, and this recipe really elevates the summer side dish. Spicy jalapeno, fresh cilantro, and our Lime Olive Oil all get rubbed over freshly grilled corn cobs. This is a no-brainer recipe that’s just full of flavor! Omit the jalapenos for the kids and pile them on for Dad.
