Avocado-Spinach Salad with Honey Lime Vinaigrette

We recently received a recipe suggestion from a customer who came across a gorgeous recipe in Living Well Magazine for Cantaloupe and Avocado Salad with Honey Lime Dressing. After visiting our tasting room and falling in love with our Lime Olive Oil she emailed us and suggested we try out this recipe. Well were so tickled that we created a twist on the recipe using our pure and fresh Lime Olive Oil and seasonal spring ingredients. So simple, and so delicious!

Ingredients
1 bunch spinach leaves, ends trimmed
1 large avocado, pitted, sliced
2 medium oranges, peeled, segmented, chopped
3 tablespoons fresh lime juice
2 tablespoons Lime Olive Oil
2 teaspoons honey
Sea salt and black pepper, to taste
Directions
- Combine spinach, avocado, and oranges in a large bowl; set aside.
- Whisk together remaining ingredients in a small bowl; add to spinach mixture; toss gently and serve immediately.
Makes 4 salads.
